Customer Review: Simply The Best Tool For Maintaining A Keen Edge

Have had this sharpener for several months now and am very pleased with its performance. I am very picky about maintaining sharp kitchen knives and this tool makes it simple to keep a razor edge. Even when the wife throws a knife in the sink or lets it hit against a glass or other hard object this sharpener easily restores the edge. I sharpen my knives with a motorized water stone to create the original edge, then use a smooth steel to align the micro-teeth into the final scary-sharp cutting edge (I was taught to sharpen knives and scalpels by an old veterinary pathologist). But regular use will of course wear down these micro teeth. I used to count on going back to the water stone about once a year, but this diamond coated steel recuts the micro-teeth, allowing me to maintain a much sharper edge for a much longer time. It can actually cut a new feather edge that needs to be honed with the smooth steel. I use the water stone now mostly to repair the knives of friends and relatives who put them in the dishwasher (some of them don't ask anymore due to scolding they get). Use this tool according to the instructions, and with some understanding of what it can and cannot do. It will not create a new bevel angle or grind out serious nicks; that takes stone and water. It will keep a properly sharpened and cared for knife plenty sharp for months if not years. Definitely worth the investment.
