One thing about the gas range when we moved that just irked me was my inability to cook at low temperatures without burning things, even with my expensive "waterless" stainless steel (18/8) cookware. I was baffled and a little perturbed until one of the neighbors talked about her "diffuser." Your what, I asked? She showed me a well used, blackened metal diffuser that goes over the flame and your pot or pan sits on top of this. Imagine, I found one on Amazon for a pittance of a price, so I ordered two of them (one is in reserve, just in case). After the first usage, it blackened a little, then went on to color and season like most metals will do. The leather tie on the handle seemed a little silly and dangerous (hello? loose hanging objects on / near open flame??) so I took it off and tossed it away. Also, the wooden handle seems to be a little ill-thought out (I'm also just waiting for it to burn when the metal gets hot enough) but you just be aware of it and be ready if it does. So: I'm rating this little item with five stars because it's ingenious, works very well, prevents burning and scorching and I'm happy with it. You will be, too!

I ordered two of these, one Norpro and one of a another brand. They're almost identical. There was a note enclosed that recommended washing before use to prevent smoking. I followed the recommendation and had absolutely no smoking or odor.
It works perfectly on my gas stove. I've been frustrated for years because I couldn't adjust the flame low enough to warm or gently simmer sauces and soups.
Yes, the wood handle singes near the metal, but it's better than melting plastic or a hot all-metal handle. It doesn't bother me at all. I'm just careful to place it out of direct contact with the flame.
It's definitely worth the price.

Maybe it's just me... but the stinky, smoking handle problem wasn't an issue with me at all. When the diffuser arrived I unwrapped it and, with a gentle tug, pulled off the wooden handle! It's not like I'm going to be moving it around while I'm cooking on it. The handle would just get in my way on the stovetop, anyway. Without the handle, it stores much easier, too.
These little tin diffusers aren't designed to be used with a burner that's turned all the way up to "high". You'll need a cast iron or solid aluminum one for that kind of heat. If you're just trying to reduce hot spots or using it with a ceramic Moroccan tagine, it's perfect.

I used the diffusers on an electric stove under cooking tajines bought in Morocco, for the first time(after seasoning.)I was keeping my fingers crossed not knowing what to expect, and with guests arriving in a short time. The two diffusers I purchased worked like a charm. Food cooked beautifully and nothing cracked! They are well make and very well priced. I looked all over in St. Louis and didn't find such an item. So this website certainly saved the day for me. Shipping time was very fast!

Can't beat the price - $2. But the shipping charge is $6. I ended up ordering 4 for the same shipping charge. 2 for myself and 2 for gifting.
I bought it mostly for making Chinese clay pot rice which requires slow simmering at the end. Tried it for the first time, it worked perfectly, no bad odor or burning the wood handle.
I'm very happy with the product. It's a nice addition to my kitchen arsenal.
