I have a gas range which I like for almost all cooking except when I want to simmer or keep things hot. Even with the flame turned all the way down things would still cook or boil. The diffuser I bought allows me to simmer things without them overcooking or sticking to the pan.

I bought this diffuser to be used specifically with my ceramic tagine. I needed to bend the handle up slightly in order for the diffuser to sit flat on my smooth top stove. It works well and I'm definitely glad I made the purchase.

In fact, I liked it so much, I ordered a second one - now, no more burnt pans, scorched rice... and I can set my gas burner to simmer, expect it to remain at a simmer as long as I want it to.

Unfortunately it is difficult to find diffusers anymore although they used to be common. I suppose more controllable burners than have lessened the `need' for them than in the past. However, for some cooking, even the absolutely lowest setting (or flame) is too hot. I have always had gas burners, but I gave a set of 4 of these from Amazon to a person with conventional electric "burners" (I think she calls them "eyes") and they worked perfectly - and she is very pleased with them. Prior to that she had a very heavy, thick, stainless steel "plate" that was sold as a diffuser.
I have no idea if or how these will work on the smooth cooktops.
My mother (back in the 50's) had diffusers exactly like these, with wooden handles. I searched for years and did not find any diffusers until in the 80's. I bought 4 of them. They are identical to these except for the fact that mine have an open wire loop handle that folds over and down onto the diffuser for storage.
IF THESE HAD FOLDING HANDLES I WOULD RATE THEM AS 5 STARS. I am rating them lower only because of the wooden handles, which seem impossible not to scorch. NOTE: these are plated tin, and in a very short time they will probably be completely rust coated. I never wash a diffuser unless I actually spill food on one--I just ignore their appearance.
