I am quite impressed with the 17 X 14 inch Vollrath Co. Cookie Sheet. It is a solid, professional grade piece of equipment that is also beautiful.
After remodeling my kitchen, I discovered my 30-year old baking sheets didn't fit properly into my new oven. Better insulated than its predacessor, the oven's cavity was a bit smaller and the racks went into place in a different manner. Still, I needed to be able to bake a dozen cookies at one time so I began my search for a baking sheet that would meet my needs. While a 17 X 14 inch size was perfect, most of the sheets had the handle-lip on one of the short sides. Thus, if I wanted to place my baking sheets into the oven with the short sides parallel to the oven's sides, I was going to have a more difficult time removing the hot baking sheet from the oven. The Vollrath Co. Cookie Sheet was the only product I was able to locate with handles on both short sides. In this case, that is particularly important because of the Vollrat's more substantial weight. While not ridiculously heavy, this baking sheet is definitely more sturdy than others on the market and requires the use of two hands to lift it when it is hot.
Cookies baked on this cookie sheet bake evenly;they also brown nicely, when that is the desired result. Since I use parchment paper on my baking pans, I cannot provide information on whether baked goods stick to this sheet or not. Because of the sheet's design and when I do bake a dozen cookies, I can easily slide the parchment onto a cooling rack without demolishing even one cookie.
The Vollrath Co. Cookie Sheet has several other product features that were important to me. It is a traditional baking sheet which has no coating of any type. It was made in the United States. It was protected against scratches during shipping by an easily removed adhesive sheet. The finish is beautiful and will remain that way with care. The only flaw I found in Vollrath's design was that the hole for hanging (?) was on the flat surface rather than on one of the raised lips.
This is definitely a five-star product and is well worth its higher cost.
